For Ella’s first birthday we had a bunch of people over for a cinco de mayo party. We had:
Chips, banana guacamole, plain tomato salsa
Soft corn tacos filled with ground turkey, mole, baby kale, fage and queso fresco
Rose’s lime juice and passion fruit syrup bellinis with vinho verde
Mexican Hot chocolate
And ella wore a ridiculously adorable pink dress.
Recipes for the mole, banana guac, and hot chocolate follow. We used turkey in the tacos because in Puebla, mole with turkey is the tradition dish, which makes sense as it dates back to when Turkeys were more ubiquitous in North America.
