The filling of these beautiful little string-purses is salt-boiled lobster and pan-seared filet — thereby taking beggar’s purses up a notch on the glamour scale. Here’s the recipe for the champagne crepes:

  • 2 large eggs
  • 3/4 cup milk
  • 1/2 cup champagne
  • 1 cup flour
  • 3 tablespoons melted butter
  • Plus Butter, for coating the pan

Whisk the ingredients together, and then allow the batter to sit for 30-60 minutes, because you want the champagne flavor but if you try to fry them off when there are too many bubbles, it may make the crepes tear. When the batter has settled, heat a nonstick pan over medium heat with a bit of butter in the pan until hot, then off the heat tilt the pan, and scoop 1/4 cup of batter onto the top part, so that it will automatically drip down, then rotate the pan as quickly as possible to coat the pan. Add a bit of butter if necessary and, only when the crepe appears solid, flip it over and briefly toast the other side. Remove from the pan and repeat until there are crepes for everyone. Stuff (with my filling ideas or whatever you want), fold or tie together, and keep in the oven on a try at a low temp (100-200) to keep warm for service.
