Filling: 6 apples, cored, cubed, cooked with about 1 cup sugar, 3 TB butter and 1-2 tsp each nutmeg, ginger, allspice, cloves
Wrapped in egg roll wrapper, deep fried, and served with a tiny scoop (because we were so full!) of homemade Carrot-Cardamom gelato:
- 2 ½ cups milk
- 4 egg yolks
- ¾ cup sugar
- 1 cup reduced carrot juice
- 3 TB cardamom
Cook the milk with half the sugar. Season the hot milk. Meanwhile, beat the eggs and the other half of the sugar, then add in warm milk to eggs/sugar and beat. Cook again, not quite a boil, but allow it to thicken somewhat. Add carrot juice and cardamom, and cook until custardy, then cool, chill, then make into ice cream. This is awesome on its own but perfect with the pie samosas.
