Asia Outside: Not Vietnamese Summer Rolls

I wanted to serve my signature salad, which always has bleu cheese with assorted nuts, fresh fruit and dried fruit, but as a Vietnamese Summer Roll. I took rice paper wrappers and held them under water for 30 seconds or so, stuffed them with spinach, bleu cheese, dried sour cherries, fresh blackberries, and toasted pistachios, and wrapped them up like tiny burritos (one roll away from you, then left and right should be folded in, then finish rolling away from you). I served them with a side of oil and vinegar for dipping.
