The Feast of the Alcoholic: Tom Collins Ice Cream Sandwiches

Juniper Gelato on Lemon oatmeal cookie ice cream sandwiches

Sommelier: Alex: The Aviation (which he altered and renamed but it has escaped me now): 2 parts Cherry liqueur – he brought finger-lakes cherry liqueur– with 8 parts sapphire east, 1 part simple syrup, and 4 parts lemon juice. I had not sobered up at this point, but he did send me the recipe.




  • 2 ½ cups milk
  • 4 egg yolks
  • ¼ cup sugar
  • ½ cup brown sugar
  • 3 TB juniper berries, ground

Cook the milk with ¼ cup brown sugar. Add the berries to the milk.
Meanwhile, beat the eggs and the remaining sugars
Add in warm milk to eggs/sugar and beat thoroughly
Cook again, not quite a boil.
Strain, cool, chill, then pour into a frozen ice cream machine and wait twice as long as the instructions say (but that is always how I make ice cream).

I put this between these cookies from Smitten Kitchen but I added a few TB of freshly grated lemon rind to them.

This is a dessert that starts out good, but gets better as you go, because it is not overly sweet.
