The Banana Banquet: Goa Bananas!

Goa Bananas, goa goa bananas. Chicken Banana Xacuti Ingredients:

  • 4 drumsticks and 4 chicken thighs
  • 3 large green bananas
  • 2-3 sweet potatoes (I used one yam-style, one purple, and one white)
  • 1 medium Onion, finely chopped
  • 1 tsp Turmeric
  • 1 1/2 TB Coriander powder
  • 3 TB Tamarind paste
  • 4-6 cups chicken broth (mine was homemade yesterday)
  • 14 oz Coconut milk
  • fresh cilantro
  • 3 TB garam masala
  • 1 tsp cumin
  • 1 fresh jalapeno
  • 1/4 cup Grated Coconut
  • oil for cooking

Preparation Heat oil in the pot and add onions, cooking until translucent. Add the chicken pieces into the bottom of the pan, searing on both sides. Rough chop and add the sweet potato into the bottom of the pan, searing the potato. Add spices and coconut into the bottom of the pan, cooking against the heat for 3-4 minutes, then stirring. Now add the coconut milk and tamarind and broth, stir well, and cover, cooking over medium heat for at least 1 hour, gently stirring every 15 minutes. When the chicken and potatoes are cooked through, cut each banana in half and add them. Cook for another 15 minutes or until the banana has fully sopped up the sauce. Taste and reseason if necessary. Remove large pieces of chicken and banana, and reduce the sauce by 1/2 – 2/3. Pour reduced sauce over chicken and bananas. Garnish with cilantro and serve.
